Ok, before you start running away trying to escape from all those calories and carbs : this is a healthy version ! ?
I didn’t use a recipe at all for this, I kind of wanted to do a microwaved chocolate mug cake at first, but I remembered I didn’t own a microwave. Then, I decided to make chocolate muffins with approximately the same ingredients, but I also remembered I didn’t have any eggs, so I replaced them with peanut butter !
I like to experiment things in the kitchen, and sometimes it works ?
This version is healthy as I said, because it’s low carb (0% sugar if you use Stevia), low fat, and it can even be vegan if you use a vegetable milk, because there are no eggs in it !
• The ingredients (for ~12 muffins) :
- All purpose flour – 130 g or 1 cup
- Baking powder – 10g or 2 tbsp
- Low-Fat cocoa powder – 20 g or 4 tbsp
- Stevia – 80 g or 1/4 cup + 2 tbsp (I cant figure american units out correctly sorry)
- Salt – 1/2 tbsp
- Skimmed Milk (or almond, soy…) – 215 ml or a bit less than a cup (I guess)
- Vanilla extract – 2 tbsp
- Peanut butter – 2 tbsp
1. Mix all the dry ingredients together
This is pretty self explanatory, put all the dry ingredients into a bowl and whisk it all to avoid lumps.
2. Mix all the wet ingredients together
Start with the peanut butter and the vanilla extract, to dissolve a bit the peanut butter, so it gets mixed up better with the milk. When the milk is mixed with the peanut butter-vanilla mix, mix all the ingredients together in the same bowl.
3. Pour into the muffin holders and bake
Pour the mixture into the muffin holders (i added 2 of them to make them hold better, and bake for approximately 20 min at 175° (or at 356 Fahrenheit, I think). They are done when you stick a knife in the middle of a muffin and it gets out clean, without any trace of raw mix.
4. Sprinkle !
Take your chocolate muffins out of the oven, and they’re done ! Sprinkle them with some icing sugar or sprinkles.
To make stevia icing sugar, just put some normal stevia into a blender or a food processor 1 or 2 minutes, and then use it as regular icing sugar !

I’m sorry if you use american units but I find those so complicated to figure out according to my own measurements.
And as I said these peanut butter and chocolate muffins are 100% low sugar and low fat ! I like to bake these kind of healthy pastries because it means I can eat a lot of them without it being bad for my health.
