Since it’s pumpkin season, I made a pumpkin tart the other day !
It’s a savory recipe, I do love the classic pumpkin pie but I wanted something different. I wanted it to have a specific taste and texture so I ended mixing up different recipes, but it turned out really great in my opinion, I hope you’ll like this ! ?
• The Ingredients :
- 120g (1/2 cup) Fresh Goat Cheese
- A small Pumpkin
- A Shortcrust pastry (pie crust)
- A Handful of Walnuts
- 20g (half 1/4 Cup) Pine Nuts
- 2 Eggs
- Some Thyme
- 20 cl (3/4 cup) Coconut Liquid Cream
- Pumpkin Spice
- Salt & Pepper
- 1 teaspoon Dried Garlic
- 2 Slices of Chicken or 1 chicken breast (optional)
1. Slice the Pumpkin
Cut your pumpkin in half, and peel it. Take the seeds out, then proceed to cut it in even slices.
2. Cook The Pumpkin Slices
Put some olive oil in a pan, and cook your pumpkin in medium heat, with salt, pepper, garlic, and thyme. They’ll be done when they’re brownish and soft.
3. Pan-Fry the Chicken
I added chicken because I know Victor likes meat, but you can absolutely skip it.
Slice the chicken in bits, and lightly pan-fry it with a bit of olive oil until it gets a little brown. If you’re not using processed chicken, add some salt and pepper.
4. Mix the Eggs, Cream, & Spices
In a bowl, mix the 2 eggs, the coconut cream, a hint of pumpkin spice (I added half a teaspoon), and salt & pepper.
5. Preheat The Oven & Prepare Your Mold
Preheat your oven at 170° (338°F). Take a tart mold, and spread your pastry on it, to shape it according to the mold.
/!\ If you have a not that powerful oven like mine : You’ll need to pre-bake your crust. /!\
6. Put Your Pumpkin Tart Together
Now, spread half of the goat cheese at the bottom of the tart, by crumbling it with your fingers. Then place the pumpkin slices, and pour all of the egg-cream mix on them. Sprinkle with the chicken bits, walnuts, pine nuts, the rest of the cheese, and some thyme.
·• Bake for 20-30 min at 180° (356 °F) •·
And it’s done !
